Overview¶
A chef who can cook brilliantly but cannot cost a menu is not ready to run a kitchen professionally. Food cost management is the economic foundation of every restaurant, catering operation, and food business. Understanding food cost percentage, yield loss, and menu engineering transforms cooking skill into viable professional practice.
This module bridges the craft of cooking with the business of food. It covers how to calculate the true cost of a dish (accounting for trim loss and yield), how to set a target food cost percentage, how to analyse a menu for profitability and popularity, and how to write a standard recipe card — the document that allows any trained cook to reproduce your dish with consistent quality.
Nutritional balance is also covered: a menu is not only a financial document but a nutritional one. Understanding macronutrient balance, portion sizing, and dietary restriction management is essential for professional and home menu planning.

Theory¶

Food Cost Percentage: - Formula: food cost % = (cost of ingredients / selling price) × 100 - Industry benchmarks: fine dining: 28–35%; casual: 25–30%; catering: 20–28% - Why food cost percentage is not the only metric: labour, overhead, and portion consistency all affect profitability
Yield Calculation: - Yield percentage = (usable weight / as-purchased weight) × 100 - Example: a 1 kg bunch of asparagus may yield 700 g after trimming (70% yield) - Cost per usable portion = (price per kg / yield %) × portion weight - Why yield matters: a fillet of salmon appears cheaper than whole salmon per kg, but yield calculation often reverses the economics
Standard Recipe Card: - Components: dish name, yield, portions, ingredients (weight/volume), procedure, plating instructions, allergens, photo - Why it matters: ensures consistency regardless of which cook executes the dish; the basis for food cost calculation
Menu Engineering: - The BCG matrix applied to menus: two axes — contribution margin (profitability) and popularity (sales volume) - Stars: high margin, high volume — feature and promote - Plough Horses: low margin, high volume — reduce cost or raise price - Puzzles: high margin, low volume — better positioning/description - Dogs: low margin, low volume — remove or redesign
Nutritional Balance in a Menu: - Macronutrient progression across courses: the classic tasting menu moves from light (amuse-bouche, entrée) to rich (main) to sweet (dessert) - Avoiding flavour fatigue: vary textures, temperatures, and flavour profiles across courses - Dietary restrictions as design constraints: allergen management (nuts, dairy, gluten, shellfish); vegetarian/vegan substitutions; religious dietary laws - Portion sizing: tasting menu portions are intentionally small (3–4 bites per course); the pleasure is cumulative, not volumetric
