Exercises: Module 01 — Introduction to the Kitchen¶
Instructions¶
Complete each exercise in order. Exercises increase in difficulty. For culinary modules, exercises involve hands-on kitchen work, written analysis, or both. Photograph your results where indicated — this builds a portfolio of your progress.
Easy Exercises (1–3)¶
Exercise 1¶
Difficulty: Easy Objective: Practise mise en place discipline before a simple preparation
Task: Choose any simple recipe from your normal repertoire (a fried egg, a bowl of pasta, a cup of tea). Before you start, set up a complete mise en place: 1. Read the "recipe" fully (even if you know it by heart — this is the habit) 2. Gather every piece of equipment 3. Measure and arrange every ingredient 4. Only then begin
Reflection: Write 3–5 sentences: - How long did the mise en place take compared to the actual cooking? - What did you discover you were missing or had to improvise? - How did having everything ready change your experience of cooking?
Exercise 2¶
Difficulty: Easy Objective: Identify heat-transfer mechanisms in everyday cooking scenarios
Task: For each scenario below, identify the primary heat-transfer mechanism (conduction, convection, or radiation) and explain why you chose it.
Scenario A: Boiling potatoes in a large pot of salted water
Scenario B: Toasting bread under a grill/broiler
Scenario C: Pressing a panini in a contact sandwich press
Scenario D: Steaming broccoli in a basket above simmering water
Scenario E: Melting chocolate in a bowl set over a pot of barely simmering water (bain-marie)
Write one or two sentences per scenario explaining your reasoning.
Exercise 3¶
Difficulty: Easy Objective: Memorise the five basic tastes and apply them to real food
Task: Eat one piece of food that clearly represents each of the five basic tastes and write a one-sentence description of the taste experience.
Examples (choose your own): - Sweet: a ripe strawberry or a teaspoon of honey - Salty: a plain cracker or a small piece of parmesan rind - Sour: a wedge of lemon or plain yoghurt - Bitter: unsweetened dark chocolate (70%+ cacao) or strong black coffee - Umami: a spoonful of miso paste or a piece of aged cheddar
Then: Take a simple broth (stock cube is fine) and taste it. Add a few drops of lemon juice and taste again. Write what changed. Then add a small pinch of salt and taste again. Write what changed. This is acid and salt as balancing tools in real time.
Medium Exercises (4–6)¶
Exercise 4¶
Difficulty: Medium Objective: Execute mise en place for a multi-component recipe
Task: Make a classic French vinaigrette using the following specification, with full mise en place before any mixing begins.
Classic Vinaigrette: - 45 ml extra-virgin olive oil - 15 ml red wine vinegar - 1 tsp Dijon mustard - 1 small shallot (about 20 g), very finely minced - Salt and freshly ground black pepper
Steps: 1. Set up mise en place: measure all liquids into separate small containers; mince shallot; lay out mustard, whisk, and medium bowl before starting 2. In the bowl, whisk mustard, vinegar, and salt 3. Add oil in a slow stream while whisking continuously to form an emulsion 4. Add shallot; taste and adjust seasoning 5. Dress a handful of mixed leaves; taste
Written reflection: - Is the emulsion stable (does it hold, or does it separate immediately)? - What happens if you add all the oil at once instead of gradually? Try it with a small amount and describe the difference. - What would you change to make the vinaigrette more acidic? More savoury?
Exercise 5¶
Difficulty: Medium Objective: Practise kitchen safety — food temperature awareness
Task: Using a thermometer, measure and record the temperature of: 1. Your refrigerator (aim: ≤ 4 °C) 2. A cup of freshly boiled water after 1 minute, 5 minutes, and 10 minutes of cooling 3. A cup of water at "room temperature" (this is your baseline for the danger zone exercise) 4. A cooked piece of chicken (any method) at the thickest point before and after resting
Record your readings in a table:

Reflection: At what point during cooling does the water enter the danger zone (below 60 °C)? How quickly could a pot of hot stock enter the danger zone if left at room temperature?
Exercise 6¶
Difficulty: Medium Objective: Make a compound butter and evaluate flavour balance
Task: Make the Maître d'Hôtel Butter from the Examples section of this module. Then make a second variation of your own: choose a flavour profile (e.g., spicy, Asian-inspired, smoked, herb) and combine three or four complementary flavourings with 100 g softened butter.
For each butter, record: - Name and ingredients - Rationale for flavour combinations (which of the five tastes are represented?) - Tasting notes after melting a coin-sized piece onto a piece of toast
Hard Exercises (7–8)¶
Exercise 7¶
Difficulty: Hard Objective: Demonstrate the Maillard reaction and understand its requirements
Task: Cook the same ingredient (chicken breast or mushroom) four ways to observe the effect of different conditions on browning:
Trial 1 — Correct conditions:
— Pat dry completely; preheat pan until very hot; cook undisturbed 3 min
Trial 2 — Wet surface:
— Do NOT pat dry; place in the same hot pan; cook 3 min
Trial 3 — Pan not hot enough:
— Pat dry; place in cold or barely warm pan; cook 3 min
Trial 4 — Overcrowded pan:
— Pat dry; add TWO pieces to a pan designed for one; cook 3 min
Photograph all four results side by side.
Written analysis (minimum 150 words): - Describe the colour, texture, and aroma of each result - Explain the food science behind the different outcomes using the concepts from this module - Which variable made the biggest difference?
Exercise 8¶
Difficulty: Hard Objective: Apply the brigade system as an organisational framework
Task: Plan a simple three-component meal: a protein, a vegetable side, and a sauce. Before cooking: 1. Write a "brigade plan" — assign each component to a "station" and estimate its timing 2. Work backwards from your desired serving time to create a cooking timeline 3. Write your complete mise en place checklist 4. Execute the meal and note where the timing plan succeeded or failed
Example template:
Meal: Roast chicken breast / Sautéed courgette / Pan jus
Station assignment:
— Rôtisseur: Chicken breast (25 min oven + 5 min rest)
— Entremetier: Courgette (10 min total, start 15 min after chicken enters oven)
— Saucier: Pan jus from chicken pan (5 min, start while chicken rests)
Timeline (working backwards from 19:00 service):
18:35 — Mise en place complete; oven preheated to 200 °C
18:40 — Chicken seared and transferred to oven
18:55 — Courgette started on hob
19:00 — Chicken removed to rest; pan deglazed for jus
19:05 — All components ready simultaneously; plate and serve
Reflection: Did everything come together at the same time? What would you change next time?
Expert Exercise (9)¶
Exercise 9¶
Difficulty: Expert Objective: Synthesise heat science, flavour balance, and mise en place in a designed dish
Task: Design and cook an original one-plate dish that: 1. Deliberately uses two different heat-transfer mechanisms for different components 2. Contains at least four of the five basic tastes 3. Is executed with a complete written mise en place plan prepared in advance 4. Is plated with deliberate attention to visual composition (see Module 09 for plating theory)
Document the dish with: - A written recipe with ingredients and procedure - An annotated explanation of the heat science (which mechanism, why chosen, what result) - A flavour map (list each component and which taste it contributes) - One photograph of the finished plate
There is no single correct answer here. The dish can be simple or complex. The quality of the reasoning matters more than the sophistication of the recipe.
