Overview

Chocolate is the most technically demanding confectionery ingredient, and the reason lies in its fat. Cocoa butter — the fat naturally present in cacao — is polymorphic: it can solidify into six distinct crystal structures (Form I through Form VI), each with a different melting point and texture. Only Form V produces the glossy, snapping, palate-melting chocolate that a professional confectioner expects. Tempering is the process of guiding cocoa butter into Form V crystals through a precise sequence of heating, cooling, and reheating.

This module also covers ganache — the emulsion of cream and chocolate that is the foundation of truffles, bonbon fillings, glazes, and chocolate tart fillings — and the hands-on techniques of hand-rolling truffles, piping centres, and coating in tempered chocolate.

Objectives

By the end of this module, you will be able to:

  1. Describe the journey from cacao pod to finished chocolate: fermentation, drying, roasting, conching, tempering
  2. Explain the six crystal polymorphs of cocoa butter and identify which (Form V) is the target for tempered chocolate
  3. Temper dark chocolate using the tabling method on a marble surface
  4. Test whether chocolate is correctly tempered using the smear test and the finger test
  5. Prepare a dark chocolate ganache in three ratios (1:1, 1:2, 1:3 cream to chocolate) and identify the texture difference
  6. Hand-roll chocolate truffles and coat them in cocoa powder or finely chopped nuts
  7. Pour moulded bonbons using tempered chocolate and a polycarbonate mould

Theory

  • Cacao to chocolate: the agricultural and industrial process
  • Cacao pod: fermentation of cacao beans (develops flavour precursors)
  • Drying, roasting (further Maillard development of chocolate flavour)
  • Winnowing (separating nibs from shells), grinding (melting nibs to cacao mass)
  • Adding sugar, milk (for milk chocolate), lecithin (emulsifier)
  • Conching: extended agitation at elevated temperature; develops smooth texture and removes volatile acids
  • Commercial tempering before pouring into moulds

  • Cocoa butter polymorphism: six crystal forms (I–VI)

  • Forms I–IV: unstable; low melting points; dull, soft, grainy texture
  • Form V: stable at room temperature (mp ~34 °C); glossy; hard snap; melts smoothly at body temperature — the target
  • Form VI: over-stable; high melting point; waxy texture; develops in very old chocolate
  • Why tempering matters: untempered chocolate has a mix of crystal forms; results in "bloom" (grey streaks from fat migration), soft texture, and poor snap

  • The tempering process (tabling method):

  • Melt chocolate to 50–55 °C (dark), destroying all existing crystals
  • Pour two-thirds onto a cold marble surface; work with a palette knife and scraper
  • Cool to 27–28 °C (for dark), seeding Form V crystal formation in the cooled portion
  • Return to main mass; reheat gently to 31–32 °C (dark); this melts unstable forms (I–IV) while preserving Form V
  • Test: smear a thin layer on the marble; it should set within 5 minutes with a glossy, matte-free surface

  • Ganache: an emulsion of cream and chocolate

  • Cream provides water and fat; chocolate provides fat, cocoa particles, and sugar
  • Lecithin in chocolate (from soy or sunflower) aids emulsification
  • Ratios and their results: 1:1 (sauce, glaze), 1:2 (soft truffle centre), 1:3 (firm, sliceable)
  • Technique: heat cream to 80 °C; pour over chopped chocolate; stir from centre outward to build emulsion
  • Flavour infusions: herbs, spices, citrus zest steeped in cream before straining

  • Truffles: ganache cooled, portioned, hand-rolled into spheres, coated

  • Moulded bonbons: mould pre-coated with tempered chocolate, filled with flavoured ganache, capped with second layer of tempered chocolate; demoulded when set

Common Pitfalls

  • Bloom: under-tempered (Form V not achieved) or temperature fluctuation during storage
  • Chocolate too cool when moulding (sets too fast; incomplete coverage; air pockets)
