Pâte brisée, pâte sucrée, and pâte feuilletée — the three foundational pastry doughs of French patisserie, each with a distinct structure, purpose, and technique. This module covers both the rubbing method (short pastries) and the lamination method (puff pastry).

Overview¶
Pastry doughs are the architecture of patisserie. Where bread-making seeks to maximise gluten development to trap fermentation gases, pastry-making seeks the opposite: to minimise gluten formation while creating specific textures through careful management of fat and water.
Pâte brisée (short-crust pastry) is the all-purpose savoury pastry shell: flaky, buttery, neutral in flavour. Pâte sucrée (sweet pastry) is richer and more tender, with added sugar that inhibits gluten and creates a crisp, biscuit-like texture ideal for tart shells. Pâte feuilletée (puff pastry) is the most technically demanding of the three — a laminated dough in which hundreds of alternating layers of dough and butter are created through repeated folding and rolling, producing the characteristic lift and flakiness through steam expansion during baking.

Objectives¶
By the end of this module, you will be able to:
- Explain why pastry doughs minimise gluten development, and describe three techniques used to achieve this
- Make pâte brisée using the rubbing method (sablage), rest, roll, and blind-bake a tart shell without shrinkage
- Make pâte sucrée using the crémage method, and explain how sugar and fat ratios differ from brisée
- Make a rough puff pastry (demi-feuilletée) with at least 100 visible layers
- Explain the science of lamination: how alternating fat and dough layers create steam-lifted separation during baking
- Complete a simple fruit tart (pâte sucrée + pastry cream + fresh fruit + glaze)
- Identify and explain the visual signs of over-worked vs. correctly made short pastry
Theory¶

- The three enemies of short pastry: over-working, warmth, and excess water — all promote gluten
- The rubbing method (sablage): rubbing cold butter into flour to create a mealy, sand-like texture; fat coats flour particles before water is added, physically limiting gluten formation
- The crémage method (for pâte sucrée): creaming butter and sugar first; the sugar draws water away from flour; results in more tender, crumbly texture
- Resting dough: why dough must rest in the fridge — gluten relaxes, fat firms, water distributes evenly
- Blind baking: baking a pastry shell with weights (dried beans or ceramic weights) to prevent the base from puffing and the sides from collapsing
- Laminated dough (feuilletage): the détrempe (base dough) and beurrage (butter block) are combined; through repeated folding (tourage), layers multiply; 6 folds × 3 layers per fold = 729 layers of dough/butter at minimum
- Steam expansion: each butter layer contains water (about 16%); when the oven is hot, this water flashes to steam, pushing layers apart to create the classic lift and flakiness
- The role of cold temperature in lamination: butter must remain plastic (not liquid) during the folding process; working on a chilled surface is essential
- Pastry cream (crème pâtissière): a thick custard made with cornflour as primary thickener; the standard filling for fruit tarts and éclairs
- Common tarts: tarte aux pommes, tarte au citron, tarte tatin (caramelised apple upside-down tart)
