Bonus Question (5 pts)

Bonus 1. The Maillard reaction was first described by Louis-Camille Maillard in 1912, but it was not fully applied to culinary science until much later. Research (or reason from the module) why the reaction requires both amino acids and reducing sugars — not just one or the other — and explain what would happen to the browning and flavour if you attempted to sear a piece of starchy food (like a potato) versus a protein (like a steak) in the same pan at the same temperature.
