Projects: Culinary Arts and Patisserie

Project ideas for every stage of the learning journey. Complete at least one project per difficulty level to earn points and build a real portfolio of culinary work. Each completed project earns 15 points — log completion in PROGRESS.md.

Beginner Projects

Project B-1: The Compound Butter Collection

Modules: 01–02 Deliverable: Prepare three different compound butters (e.g., herb butter, blue cheese butter, lemon-caper butter). Roll each in clingfilm, label, and photograph. Write tasting notes for each.

Project B-2: Vinaigrette Variations

Modules: 01 Deliverable: Prepare four vinaigrettes using the 3:1 oil-to-acid ratio as a base, varying the acid (red wine vinegar, lemon, balsamic, sherry vinegar) and adding one emulsifier (mustard) to two of them. Compare the texture and stability of emulsified vs. broken vinaigrettes. Document results.

Project B-3: Knife Skills Showcase

Modules: 02 Deliverable: Photograph ten plates demonstrating each of the seven standard cuts using three different vegetables. Caption each photo with cut name, vegetable, and use case.


Intermediate Projects

Project I-1: The Mother Sauce Series

Modules: 03 Deliverable: Over one week, prepare all five mother sauces from scratch on separate days. For each, produce one derivative sauce. Document ratios, technique notes, and one photograph per sauce.

Project I-2: A Perfect Roast Chicken

Modules: 04 Deliverable: Roast a whole chicken using dry-brine and high-heat technique. Rest correctly. Carve and present. Write a technical account of the cooking process — temperatures, times, visual cues, and flavour assessment.

Project I-3: Egg Techniques Tasting Plate

Modules: 05 Deliverable: Prepare and photograph five egg preparations on one plate: scrambled (French style), poached, fried (sunny side up), soft-boiled, and a rolled omelette. Write a technical note explaining the temperature and protein coagulation principles for each.


Advanced Projects

Project A-1: Sourdough Loaf — Week-Long Project

Modules: 06 Deliverable: Maintain a sourdough starter for seven days, bake one loaf, and document the process with daily photographs of the starter activity and a final crumb shot. Include the baker's percentage formula you used and reflect on the result.

Project A-2: Tarte aux Pommes Classique

Modules: 07 Deliverable: Produce a classic apple tart from scratch: make pâte sucrée, blind-bake the shell, prepare a pastry cream filling, arrange and glaze apple slices. Photograph and write a technical review of your dough technique and any adjustments you would make next time.

Project A-3: Ganache Truffle Box

Modules: 08 Deliverable: Temper dark chocolate, produce a ganache with at least two flavour variations (e.g., vanilla-sea salt, raspberry), mould or hand-roll twelve truffles, and coat in tempered chocolate or cocoa powder. Photograph the finished box and record the tempered chocolate's snap test result.


Expert Projects

Project E-1: A Three-Course Dinner Party

Modules: 03–05, 09, 11 Deliverable: Plan, cost, and execute a three-course dinner for at least four people. Menu must include a sauce derived from a mother sauce, one pastry or custard element, and a plated dessert. Submit: menu card, food cost calculation, and one photograph per course.

Project E-2: Menu Engineering Analysis

Modules: 11 Deliverable: Take a real restaurant menu (use a publicly available menu). Classify each dish as Star, Plough Horse, Puzzle, or Dog using the Boston Consulting Group matrix approach applied to food cost and popularity. Write a 500-word analysis with recommendations.


Capstone Project

Project C-1: The Tasting Menu

Modules: All (01–12) Deliverable: See Module 12: Capstone Project for the full brief.

Design, cook, plate, photograph, and document a complete 4-course tasting menu: - Amuse-bouche — one bite, conceptually provocative - Entrée — first course, light; demonstrates sauce and prep skills - Plat principal — main course; demonstrates cooking method mastery and plating - Dessert — applies at least one patisserie technique from Modules 07–09
