Overview

A plated dessert is a complete sensory experience: flavour, texture, temperature contrast, and visual composition all working together on a single plate. This module combines the technical production of three classical desserts — panna cotta (gelatin-set cream), crème brûlée (baked custard with caramelised sugar crust), and chocolate mousse (aerated ganache stabilised by egg foam) — with the visual language of professional plating.

Plating is not decoration for its own sake. Every element on a plate — every dot of sauce, every crisp tuile, every quenelled ice cream — serves both flavour and composition. Understanding the principles of visual composition (the rule of thirds, contrast of colour and texture, the deliberate use of negative space) gives you a vocabulary for designing plates rather than simply arranging food.

  6. Explain the role of each element on a composed dessert plate (anchor, sauce, garnish, crumb)

Theory

Desserts: - Panna cotta: gelatin-set cream; gelatin hydration and blooming; the ratio of gelatin to liquid determines set firmness; standard is 7–10 g gelatin per 500 ml cream for a trembling set - Crème brûlée: a baked egg custard (covered in Module 05) + the caramelisation of the sugar crust; blowtorch technique vs. grill/broiler; the sugar crust must be thin and glassy - Chocolate mousse: two methods — (1) ganache base folded with whipped cream (simpler, rich); (2) ganache base + Italian meringue (lighter, more stable); both use aeration for texture - Italian meringue: hot sugar syrup cooked to 118 °C poured onto whipping egg whites — produces a stable, glossy meringue that does not weep; used in mousses, buttercreams, and soufflés

Plating Composition: - The plate as a canvas: negative space is not wasted space — it directs the eye - The rule of thirds: divide the plate into a 3×3 grid; place the main element at an intersection, not the centre - Texture contrast: every successful plate has a contrast of textures (crisp vs. soft, smooth vs. rough) — the toffee shard on a panna cotta; the tuile on a mousse - Temperature contrast: hot sauce + cold ice cream; warm chocolate fondant + cold crème anglaise - Colour: natural flavour pairings often produce good colour contrast (dark chocolate + bright orange sauce; pale panna cotta + deep berry coulis) - Elements of a composed plate: anchor (main element), sauce, garnish, crumb/crisp element - The quenelle: a three-sided oval shape formed by passing between two spoons; used for ice cream, sorbet, mousse, and cream; requires a cold, slightly fluid base - Sauce dots and swipes: use a squeeze bottle for dots; a small offset palette knife or spoon for swipes; work on a cold, dry plate

Common Pitfalls
